Ingredients

  • For the Filling:

  • 1 package vegan cream cheese (room temperature)

  • 1/3 cup powdered sugar

  • 1 tbsp vanilla extract

  • For the French Toast Batter:

  • 3/4 cup plant-based milk (almond, soy, oat, etc.)

  • 1/2 a brick silken tofu (or sub with 1/2 cup Just Egg + plant-based milk)

  • 1 tsp sugar

  • 1 tsp cinnamon

  • Pinch of nutmeg

  • 1/2 tsp vanilla extract

  • Pinch of black salt (kala namak)

  • 1/2 tsp arrowroot flour

  • For the Toast:

  • 6-8 slices day-old bread (Texas toast, French loaf, or any thick bread)

  • Vegan butter or oil for frying

  • Berry Compote (fresh or frozen strawberries, 1 tbsp sugar, 1/2 tbsp orange juice – cooked over the stove)

Directions

  • Prepare the Filling: In a small bowl, mix the vegan cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  • Assemble the Casserole: Lightly grease a 9×13-inch baking dish.
  • Slice your bread into thick cubes and place half of them in the baking dish.
  • Spread the cream cheese mixture over the bread layer.
  • Top with the remaining bread cubes, ensuring an even distribution.
  • Make the Custard:In a large mixing bowl, blend together the plant-based milk, silken tofu (or Just Egg alternative), sugar, cinnamon, nutmeg, vanilla extract, black salt, and arrowroot flour.Pour the custard mixture evenly over the bread, pressing down lightly to ensure all the pieces absorb the liquid.
  • Chill Overnight (Optional):For the best texture, cover and refrigerate for at least 2 hours or overnight to let the bread soak up the custard.
  • Bake the Casserole: Preheat your oven to 350°F (175°C). Bake for 10 minutes uncovered and then cover with foil and bake for an additional minute, keeping a close eye on it after 25 minutes to ensure it doesn’t brown too much.
  • Serve and Enjoy: Let the casserole cool slightly before dusting with powdered sugar, add some berry compote, and drizzling with maple syrup. Serve warm and enjoy your vegan stuffed French toast bake!
