1 package vegan cream cheese (room temperature)
⅓ cup powdered sugar
1 tbsp vanilla extract
For the French Toast Batter:
¾ cup plant-based milk (almond, soy, oat, etc.)
½ cup silken tofu (or sub with ½ cup Just Egg + plant-based milk)
1 tsp sugar
1 tsp cinnamon
Pinch of nutmeg
½ tsp vanilla extract
Pinch of black salt (kala namak)
½ tsp arrowroot flour
For the Toast:
6-8 slices day-old bread (Texas toast, French loaf, or any thick bread)
Vegan butter or oil for frying
Berry compote, for topping (fresh or frozen strawberries, 1 tbsp sugar, ½ tbsp orange juice– over the stove)
Directions
- Make the Filling: In a bowl, mix the vegan cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- Prepare the Batter: Blend the silken tofu, plant-based milk, sugar, cinnamon, vanilla, and black salt until smooth. Pour into a shallow dish. (If using Just Egg, whisk it with the plant-based milk instead.)
- Assemble the Stuffed Toast: Spread a generous amount of the cream cheese filling onto one slice of bread. Top with another slice to make a sandwich. Repeat with remaining bread.
- Dip and Cook: Heat a non-stick skillet or griddle over medium heat and add a little vegan butter or oil.
- Dip each stuffed sandwich into the batter, coating both sides without soaking too much.
- Cook for 2-3 minutes per side until golden brown and crispy.
- Serve: Plate the stuffed French toast and top with warm strawberry compote.
- Optionally, dust with powdered sugar or drizzle with maple syrup.
