½ butternut squash, peeled and cubed
1.5 tbsp tomato paste
½ tsp smoked paprika
½ tsp turmeric
1 tsp curry powder
½ tsp ground cumin
1 can lentils, drained and rinsed
1 carton (about 4 cups) low-sodium vegetable broth
½ cup crushed tomatoes
½ tsp salt
Pepper, to taste
1 bay leaf
1.5 cups water
Directions
- Sauté the aromatics: In a large pot over medium heat, sauté the onion, garlic, leeks, carrots, and celery in a splash of water or oil until softened (about 5–7 minutes).
- Add the squash and spices: Stir in the butternut squash, tomato paste, smoked paprika, turmeric, curry powder, and cumin. Cook for another 2–3 minutes until fragrant.
- Simmer: Add the lentils, vegetable broth, crushed tomatoes, bay leaf, water, salt, and pepper. Bring everything to a boil, then reduce the heat and let it simmer for 25–30 minutes, or until the veggies are tender.
