Ingredients

  • 3-4 large carrots

  • For the brine:
  • 1/4 cup salt

  • 1 tbsp brown sugar

  • 1/2 cup water

  • For the marinade:
  • 1 tsp smoked paprika

  • 1 tbsp rice vinegar

  • 1/2 tsp olive oil

  • 2 tbsp water

Directions

  • Prepare the Carrots: Peel and slice the carrots into ribbons using a vegetable peeler.
    Bring a pot of water to a boil. Add the carrot ribbons and boil for 2-3 minutes, or until they become soft.
  • Make the Brine: In a separate bowl, mix the salt, brown sugar, and water. Stir until the salt and sugar are dissolved.
    Once the carrots are soft, transfer them into the brine and refrigerate for 30 minutes.
  • Rinse the Carrots: After 30 minutes, remove the carrots from the brine and rinse them under cold water.
  • Make the Marinade: In a small bowl, combine the smoked paprika, rice vinegar, olive oil, and water. Stir well until evenly mixed.
  • Marinate the Carrots: Place the rinsed carrots in the marinade and toss them to coat evenly.
    Cover and refrigerate for at least 2 hours, or for best results, overnight.
